Tandoori Wrap.

Ingredients.

3 ½ c cooked chicken meat – diced
4 shallots – sliced
¼ c tandoori paste
200g (3/4 c ) yoghurt
2 Tablespoons chopped fresh coriander
1 tablespoon lime juice
½ tsp sugar
4 pieces lavish bread or your favourite wrap
4 lettuce leaves
1 tomato
 

Method.

1.    Heat 1 tbls oil in frying pan
2.    add chicken tandoori paste, shallots & half yoghurt
3.    cook stirring for 3 mins until hot
4.    In a bowl combine remaining yoghurt, coriander, lime juice & sugar
5.    Place ¼ chicken mixture along short side wrap, drizzle with yoghurt and 2 tsp chutney.
6.    Roll up to enclose filling
7.    Repeat with remaining mixture
8.    Makes 4 delicious wraps


TIP: Always be careful of spitting oil when using the fry pan.
